Light amber is very light, golden and has a very delicate flavor.
Medium Amber is a little darker and has a more pronounced maple flavor.
Dark Amber is even darker and the maple flavor is even stronger.
Grade B is the darkest of all and the maple flavor is truly robust. Often used in cooking but many prefer the robust flavor for table use too.
The biggest difference between the grades is flavor intensity with light being the least and B being the strongest flavor. Our biggest sellers are dark amber, followed by medium with B being third and light the fewest in sales.
New grade standards are being implemented to bring the whole maple producing world into one uniform grading system. All newly bottled syrup on or after 1/1/15 must use the new system. Producers have until 1/1/16 have all inventory using the new standard. Thus we will have both grades until the older supply is sold out. The new grades are as follows:
Golden Color, Delicate taste, this is the lightest of the grades and has a very delicate flavor. (most resembles the old Light Amber grade).
Amber Color, Rich Taste, this is a medium colored syrup and has a richer maple taste. (most closely resembles the old Medium Amber grade).
Dark Color, Robust taste, this syrup is darker still and has an even more pronounced maple taste, (It most closely resembles the old Dark Amber grade).
Very Dark Color, Strong Taste, this grade is anything darker that "Dark Color" and has the strongest taste of all. This grade essentially starts at the old grade B and goes even darker.
While all maple syrup must be at the same sugar percentage, (66.5-67.9% sugar), the biggest difference is the intensity of the flavor. All maple syrup must be of good flavor, anything with an after taste or off flavor can only be sold in bulk for reprocessing regardless of the color. Reprocessing grade can not be sold retail.
While the exact break points between grades are not the same, they are very close and for all practical purposes are the same.
We also carry one item we do not make. We carry O’keeffe’s Working Hands and Healthy Feet. Both are available in a handy 2.7 oz container. It only takes a little to work wonders on dry cracked hands or rough hard feet.
